I just can’t say it enough. I LOVE PANCAKES.
But during the week, it is a race against the clock to tame my unruly hair, pack lunches, put makeup on, make breakfast for both of us, and manage to get out the door in time to beat the Atlanta morning rush. This recipe is super quick and easy and still allows me to have my favorite breakfast even when time is of the essence.
340 Calories – 33g carbs/31g protein/9g fat
1/4 cup pancake mix
1/4 cup egg whites
25g vanilla whey protein powder
1 – 2 Tbsp of water
1 Tbsp peanut butter
calorie-free or sugar free maple syrup
In a microwave safe bowl, whisk together pancake mix, egg whites, protein powder and water.
Microwave for 1:30 – 2:00 on 80% power or until thoroughly cooked. The top might be a little gooey, but that’s ok! Also, I find the reduction in power keeps the pancake from becoming too dry. Once cooked, spread peanut butter and top with pancake syrup.
The great thing about this recipe is it can be adjusted to your macros! When I have more room in my diet, I opt for more peanut butter or regular syrup for extra carbs. When I am cutting, I reduce (or eliminate) the amount of peanut butter and opt for a calorie-free syrup like Walden Farms.
